Oh…Hello there.

Sometime in the Summer of 2011 I made a fateful decision to try my hand at blogging.  Food and cooking blogs are not exactly an original idea anymore, and there are many bloggers out there who are far more talented than I.

When I decided to start this, I assumed that the only people who would read this would be the members of my immediate family, and maybe even that was a bit of a stretch.  For me, it was primarily a creative outlet and a way to show people what I was up to in the kitchen, whether it be successful or not.  Strangely, it still continues to surprise me when women (and men!) ask me questions about the blog, or let me know that they follow my posts.

I can’t tell you how much it means to me to know I have some support out there….

Now, almost a year later and quickly approaching my 100th blog post, a lot has changed.

My camera skills have improved significantly and I like to think that my writing is still coherent and maybe even witty at times.  Most importantly, my culinary creativity continues to expand and broaden with every dish completed.  I still continue to work primarily off of others’ recipes, but with each recipe completed I feel like I’ve gained important knowledge and skills that will one day give me the  comfort and confidence required to formulate my own recipes.

Sadly, the very nice camera that I used to utilize and had just begun to understand will no longer be available for my use.  Until I have the means to purchase a new DSLR I will primarily be using the Ipad and Iphone as my main means of photography, which is really not the same.  Hopefully, they will do some of the recipes justice.

For those of you who are new to my little blog, Welcome – My name is Erin.

And that’s Lucy…. Unfortunately, I can’t quite hold her like that anymore, but she’s still adorable and she frequently makes guest appearances in the posts.  Much like this blog, she is also getting ready to turn 1 years old.  I’m pretty sure she is my biggest fan because she always lays right at my feet when I’m working in the kitchen.  I believe this is a sign of support for the blog, and not at all an effort to stay within close proximity to falling crumbs or steaks.  Or maybe I’m just delusional…

You won’t frequently see pictures of me because who wants to post pictures of them self all over their blog?  And this is a cooking blog…you don’t need to see me.  You get one photo, just to prove I’m not a robot.

Or am I?

There have certainly be messes and successes over the last year.  Here are a few of my favorite recipes to date – those I consider most successful:

These light and flavorful fish tacos

There is never a piece of this Tiramisu left after you make it

Sauteed Chicken with Spinach and Feta Orzo

I love all of the lemon in this Shrimp Scampi

Please stay tuned.  There is a lot more to come in the future for this blog and I.

    Very interesting Erin. Everyone needs a new recipe now and then and I look forward to finding new and exciting things to try. Maybe you can teach an old dog new tricks.         A way to get more traffic! And your pictures really are awesome; you totally should have kept custody of the camera. It’s not easy to take good pictures of food!

    cocoa powder 5%, margarine 4%, milk powder 3%, cocoa mass 1%.

    ‘ You are allowed to eat lean proteins and vegetables
    each meal.
