Parmesan Chicken with Cherry Tomato Salad

I’ve been working away at my personal challenge of cooking all of the covers on my cookbooks that have pictures.  I’ve just been slow to post them!

One of my favorite cookbooks is The Best Simple Recipes from America’s Test Kitchen.  This book focuses on satisfying and flavorful dinners, that are made with minimal ingredients that can be prepared on nights when you have limited time (and energy!).

This particular recipe is ideal for people who love Chicken Parm, but do not love the time commitment required to simmer sauce all day, bake the chicken, and then broil with cheese until melted.

Start by preparing an assembly line for breading the chicken.  Add the flour to a shallow dish for dredging.  In a second shallow bowl, beat the eggs.  Combine the panko and parmesan in a third shallow dish.

Dry the chicken cutlets with paper towel and season with salt and pepper.  Dredge the cutlets in the flour, shaking off excess, then dip in the eggs, and then coat with the panko-cheese mixture, pressing to adhere.

Heat 3 tablespoons of oil in a large nonstick skillet over medium heat until shimmering.  Cook 2 cutlets until golden brown and crisp, about 2 minutes per side.

Transfer the chicken to a paper towel-lined plate.  Repeat with 3 tablespoons of the remaining oil and remaining cutlets.

Toss the cherry tomatoes, garlic, basil and 1 tablespoon of olive oil in a bowl and season with salt and pepper.

Transfer the cutlets to individual plates and top with the tomato mixture.  Serve and enjoy!

I would say, all-in-all, it looks pretty similar and equally as appetizing!


  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko bread crumbs
  • 1 cup shredded Parmesan cheese
  • 4 thin-cut boneless, skinless chicken cutlets (about 1 pound)
  • Salt and Pepper
  • 7 tablespoons olive oil
  • 1 pint cherry tomatoes, quartered
  • 1 garlic clove, minced
  • 2 tablespoons finely chopped basil

Serves 4
