Soft Pretzel Bites

Every now and then I make something that I’ve never made before, and then become totally amazed when I actually pull it off.  It always results in a “I made that?” sort of moment.

I’ve always had a special place my stomach for soft pretzels.  Anytime I head out to the mall or some sort of sporting event, I always pass on the nachos and hot dogs and corn dogs.  Without a doubt, I almost always spring for the giant soft pretzel (and sometimes a large beer to go with it).  To make them, however, seemed a little daunting…

When my first test batch of these pretzel bites came out of the oven, I tried one and actually think I may have yelped with excitement.  When Jeff agreed that they did, in fact, taste like soft pretzels should and THEN subsequently confirmed that they were actually pretty tasty, I danced through the house singing a little song, dancing a little dance.

These are a little labor intensive, but your company will be incredibly impressed when they find out you made them from scratch!

In the bowl of a stand mixer, combine warm water, sugar, yeast, and butter until combined.

Let sit for 5 minutes, then add the flour and salt and mix on low-speed until just combined.  Increase the speed to medium and knead until the dough begins to come together and pulls away from the sides of the bowl.

Add vegetable oil to a medium-sized bowl and add the dough ball, turning to coat the dough in oil.

Cover with a clean towel and allow the dough to rise in a warm place until it doubles in size, about one hour.  A good trick is to let the bowl sit on top of the oven (not in the oven..) that is heated to 200 degrees.

Preheat the oven to 425 degrees.  Bring 12 cups of water to boil in a large pot and add the baking soda.

Meanwhile, divide the dough into 8 equal pieces and roll each into a long  1/2 inch thick rope.

Slice the dough into one inch pieces. and boil them in the water solution for about 30 seconds a batch (about 15 bites a batch).  Remove from the water with a slotted spoon and transfer to a baking sheet that has been sprayed with cooking spray (do not allow the pieces to touch).

Brush the bites with the prepared egg wash, sprinkle with kosher salt, and bake for 15 to 18 minutes until golden brown.

Be prepared to be amazed at how good these are!


  • 1 1/2 cups warm water
  • 2 tablespoons light brown sugar
  • 1 package active dry yeast
  • 3 ounces unsalted butter, melted
  • 2 1/2 teaspoons kosher salt
  • 4 1/2 to 5 cups all-purpose flour
  • Vegetable oil
  • 3 quarts water
  • 3/4 cup baking soda
  • 1 whole egg, beaten with 1 tablespoon cold water
  • Kosher Salt
