Red Velvet Sandwich Cookies

Valentines Day is right around the corner.  Jeff and I usually play it low-key and try to avoid the commercialism of it all, but I must say that I’m still a sucker for the cute sweets and treats that people come up with around this time of year.

…And if chocolate should somehow manage to find its way to my face, then so be it.

February and Valentines Day are always a fun time to play around with Red Velvet recipes.  I think because February is usually so dreary and white and bleak that it’s just fun to get a dash of color to liven up a treat or dessert.

These sandwich cookies are very similar to a Whoopie pie.  The cookies are chewy and almost cake-like.  The filling is a delicious and luscious cream cheese filling.  The pecans add an extra element of crunchy texture that is the perfect garnish to the entire concoction.

All in all, this dessert is a win.  Even Jeff liked them and he isn’t even a dessert person.

Start by preheating your oven to 375 degrees.

In a medium bowl, combine the flour, cocoa, baking powder, baking soda, and salt.

Using your electric mixer, cream together butter and sugar until light and fluffy, about 3 minutes.  Add the eggs one at a time and beat in.  Add the buttermilk, vinegar, vanilla, and red food coloring and mix until combined.  Once combined, add the flour mixture and mix slowly until incorporated.

Line a baking sheet with parchment paper and drop about a teaspoon or two of batter on to the baking sheet.  You might want to do a test run with a few different amounts of batter before making too many cookies.  These cookies spread out quite a bit so you could end up with a very large cookie sandwich if you aren’t careful about portion sizes.

Bake the cookies for 10 minutes, remove the tray, and allow the cookies to sit on the warm baking sheet for a few additional minutes.  Transfer the warm cookies to a wire rack to cool completely.

To make the cream cheese frosting, mix together the cream cheese, butter, vanilla until smooth.  Add the powdered sugar and mix on low until incorporated.  Once the sugar is mixed in, increase the speed to high and mix until light and fluffy.

Spread a glob of filling between two sandwich cookies and push the cookies together to help spread the filling out.

For the final touch, roll the cookie in the chopped pecans.  Obviously, this step is optional, but I highly recommend it.

These cookies are tasty and festive.  Hope they can make it to your V-day celebration!


For the Cookies:

  • 1 1/3 cup of all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup butter, room temperature
  • 1 cup sugar
  • 2 eggs
  • 2 tablespoons buttermilk
  • 2 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tablespoon red food coloring

For the Filling:

  • 1 8oz package of cream cheese
  • 1 stick of unsalted butter, softened
  • 1/2 tsp vanilla extract
  • 2 cups powdered sugar
  • 1/2 cup chopped pecans (optional)
Makes 12 to 15 cookies

    Beautiful post. Lovely photography. I have to admit that I dread Valentines Day. When I was a kid, I would be either horrified if I got a card or disappointed if I didn’t. I hated giving the cards too. Now I live with a wife and two daughters who know my feelings. I do sneak a bunch of roses into the house all the same.
