Pomegranate-Champagne Punch

A few weekends ago, Jeff and I hosted a small XMAS party in our new home.  It goes without saying that our friends like to imbibe now and again.  In addition to the normal wine and beer offerings, I thought that I’d spice up the holidays with a festive drink for everyone to enjoy.

(OK, so maybe just the ladies took advantage of the cocktail, but they all reported that it was tasty and strong!)

I think the men would have liked it too, but then you have to explain to other men that you are drinking something with “Pomegranate” in it and that clearly is not going to score you too many “man” points.

(They compete for those, don’t they?)

This cocktail is a piece of cake – just mix all of the ingredients together and serve!  Very festive for the holidays 🙂

Start by making a simple syrup: Bring 1/2 cup water and sugar to boil in small saucepan, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.

To make the rest of this delightfully boozy concoction, you will need the following ingredients:

The original recipe also calls for Pomegranate seeds, but honestly, I didn’t see a need to get all “foofy” with this.  Also, I didn’t really see what they would add other than increased cost.

Combine ingredients and add enough simple syrup to sweeten the drink to your liking.

Ingredients

  • 1/2 cup water
  • 1/2 cup sugar
  • 2 750-ml bottles chilled brut Champagne
  • 1 1/2 cups white rum
  • 1 1/4 cups pomegranate juice
  • 1 large lemon, thinly sliced
  • Pomegranate seeds (optional, in my opinion…)
  • Fresh mint leaves
