Chicken Quesadilla Pie

Mmm…Delicious Chickeny, Cheesy, Spicy, Goodness….

This dish reminds me a little bit of chicken pot pie, in that there is an ooey gooey, creamy chicken filling.  That’s where the similarities end though…

Instead of a pie crust, we’ve got a tortilla base layer with a layer of melty cheese on top.  Instead of hearty, soul-warming chicken-pot-pie filling, we’ve got spicy, cheesy, mexican-inspired filling.

Best of all, this dish is EEEEEASY….  It uses an excellent super-market trick:  Rotisserie Chicken.  If your local grocery store is anything like mine, then you have those juicy rotisserie chickens warm and ready to go, just waiting to be picked up.   Instead of spending all of the time to make a bunch of chicken, these little guys are flavorful, juicy, and just needed to be shredded into bite-size pieces.

So do that.  Start with that.

You should get about 3 cups of cooked chicken.

Adjust the oven rack to the middle position and preheat to 450 degrees.  Grease a 9-inch pie plate and press the 10-inch flour tortilla in.  Spray lightly with vegetable oil.

Toss the chicken with chopped cilantro, jalapenos, 1 cup of cheese, and 1/2 teaspoon of salt and pepper each.  Spread the filling over the tortilla.

Whisk the eggs, milk, flour, baking powder, and 1/2 teaspoon salt in bowl until smooth. Slowly pour over the filling, then sprinkle with the remaining cheese.

Bake until surface is golden brown, about 20 minutes.  Let cool 5 minutes, cut into wedges, and serve!  Delicious, easy, simple.  What could be better?

Ingredients

  • 1 (10-inch) flour tortilla
  • 1 rotisserie chicken, skin discarded, meat shredded into bite-sized pieces
  • 1/2 cup finely chopped cilantro
  • 1/3 cup drained jarred pickled jalapenos, chopped
  • 2 cups shredded sharp cheddar cheese or mexican cheese blend
  • Salt/Pepper
  • 2 large eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
Serves 4 to 6
