Garlic Basil Shrimp

I’ll admit, I’ve been on a bit a shrimp kick lately (and I have yet another shrimp dish planned for later this week…).  I can’t help it.  It’s healthy and tasty and just really hits the spot in the summertime.  This one can be thrown together pretty quickly.

This garlicky shrimp dish would be excellent over linguine or rice or served with some crusty bread to soak up the sauce.

Compile the necessary ingredients…

With this much garlic, it really helps and saves time if you’ve got one of these fancy garlic smushers:

Pat the shrimp dry with paper towels and season with salt and pepper.  Heat 1 tablespoon of olive oil in a large, non-stick skillet over medium-high heat until just smoking.  Add shrimp and cook until lightly browned, about 1 minute per side.  Transfer to plate.

Add remaining oil, garlic, and 1/2 teaspoon pepper to empty skillet and cook until fragrant, about 30 seconds.  Stir in wine and tomatoes and simmer until slightly thickened, about 5 minutes.

Off heat, whisk in basil, butter, capers, and lemon juice.

Add shrimp and any accumulated juices to skillet.  Cover and let sit until shrimp are heated through, about 5 minutes.  Season with salt and pepper and serve.


  • 1 1/2 pounds extra large shrimp, peeled and deveined
  • Salt and Pepper
  • 2 Tablespoons of olive oil
  • 10 garlic cloves, minced
  • 3/4 cup of dry white wine
  • 1 (14.5 ounce) can of diced tomatoes
  • 1/2 cup finely chopped fresh basil
  • 4 tablespoons unsalted butter, cut into 4 pieces
  • 2 tablespoons drained capers
  • 1 teaspoon lemon juice
